I guess I’ll start with The Chicken Cacciatore recipe that I promised that I'll put on the blog and some pictures… :) I must say it was very easy to make, looked great and tasted even better! :)

CHICKEN CACCIATORE

3T flour
1t dried oregano
1/2t salt (optional)
1/4t pepper
4 chicken breasts
1 1/2T olive or vegetable oil
1 medium onion (chopped)
2 cloves garlic (minced)
1 can (16oz) stewed tomatoes (undrained)
1 large green pepper (chopped)
2c rice or noodles (cooked)

Combine flour and seasonings in plastic bag. Add chicken breasts, one at a time, shaking to coat. In skillet, heat oil over medium heat. Add chicken and cook until golden brown. Turn, add onion and garlic. Continue to cook for 4-5min. or until onion is crisp. Add tomatoes, green pepper and cook uncovered about 8min. until sauce thickened. Turn chicken after 4min.
Serve over hot, cooked rice or noodles.

As you can tell I added some strawberries as well. :)
But it was YESTERDAY! :)

Today I made Penne Pasta with Garlic Parmesan Sauce and Bruschetta con Pomodori as an appetizer. It was so good that we ate it before I could take any pictures… :) But I guess it’s a very good thing! :)

So, as you can all tell by now, I’m in a totally nesting mood. I cook pretty much every day and I tell myself that I’ll go on a diet later – after Olivier’s born… But Bry and Traci seem to be grateful for that, so that’s all that matters, right? :)

But don’t be fooled. That’s not all I did today! I was busy, busy, busy girl. I did the laundry (we haven’t done it in 2 weeks plus I had to wash all winter clothes), went to the store, took Tess for a walk, finished watching Lost – Season 2 and 2 new episodes, from Season 3. Now, how great is that! :)

Also I figured out that Olivier loves Disney music, because anytime Bry and I drive in a car listening to Disney cds, he stops moving and I think he listens, while when we’re listening to other stuff , he starts moving and I don’t think he’s happy about that. That’s really cool… Maybe that’s a tip for us! :)
